This is what I do. Wash, trim as if boiling. Place in baking dish with a swiggle of olive oil, fresh sliced garlic, and coarse sea salt. Add about a cup of water, and cover the dish with foil. Bake between 350° and 400° (again, depending on what else I've got going). The water will eventually evaporate, but not before the beets are nearly cooked. I don't even always skin mine if they aren't huge. But, if you prefer, slip off skins then eat. The salt, oil, and garlic are usually all the seasoning mine need. Mmmm!
