I know this isn't an "official" recipe, but as canning takes so much out of me (I know, I know..but it really is a lot of work if you're not planning to do a ton at once), I tend to shortcut where I can. I freeze my tomato sauce because I have a big chest freezer and can fit in many quarts. And, for pickles, sometimes I just make up the pickling liquid, or reuse some from a GOOD jar I've purchased, and put fresh vegetables in. Store in fridge for a couple weeks, et viola! That's what I'd do for pickled beets. Let's see what the REAL cooks have to say (grin).
