I know a very simple beet borscht (not all borscht has beets, btw)

Once the beets have been cooked, you take some beef broth (or chicken, but I think beef tastes better) the beets peeled and cubed, peeled and cubed potatoes, carrots and chopped onions. Bring them to a boil, simmer until the spuds are soft, then you can either eat it as is or puree it. (oh, yes, salt to taste, but I prefer it unsalted.) It is good hot or chilled. As for the amounts, I found them in my Fanny Farmer cookbook. Pureed beet borscht is how I got my now 9 yo to eat pasta (she hated it until I thought to put some beet borscht on it, seeing as she loves cooked beets and the borscht.)
