Put in a sauce pan and cover with water. Bring to a boil and cook until tender. The time will depend on the size of the beet. Walnut size - 20 minutes, Golf ball size - 30 minutes, Baseball size - 45 or more. A fork should go easily into them. Run them under cold water and in the water stream pick up the hot beets and "slip" the skins off of them. This will be easy. Work quickly, they are hot, use plenty of cold water. After the beet is pealed, lay it on cutting board and slice it, place slices in serving dish and add fresh butter, salt and pepper. They can be easily reheated in the microwave, so you can prepare them anytime of the day and have them ready for the next meal. DON'T cook beets or peel beets or slice beets wearing anything you can't have stained. A pink and purple tie-dyed tee shirt hides all sins. Good luck.
