Simple-simple recipe that is just basic beets:
Cut some of the tops off, leaving about an inch of greens (or else they will "bleed" into the water"--no biggy). Rinse the beets off, place in a pot, and cover with water. Boil until soft (poke them with a fork after cooking for 1/2 hour). Mine took about an hour, but they are quite large.
When soft (fork goes in and out easily), drain the hot water and fill the pot with cold water. Allow to cool enough to be able to handle them. Then, under running water, slip the tops and skins off--they will come off easily. Cut out any parts of the skin that did not slide off. Slice into discs or cut into chunks.
At this point, I usually refrigerate them--I make them at the meal before the time we plan to eat them. So you can either add a pat of butter and sprinkle of salt (opt.) and eat them warm, or you can reheat them with butter & salt in the microwave for the next meal.
