This is delicious. I've got everyone in my family requesting it every time they see me - so now it's called "Karen's Pizza" and here it is--- so easy to make!
Karen's Pizza
One Boboli crust (I prefer the thin whole wheat)
Pesto (I like Buitoni)
Tomatoes
Fresh Mushrooms
Black Olives
Feta Cheese (I like Vigo)
Artichoke Hearts
Spread the entire 7 ounces of pesto on your pizza crust. Slice tomato and cover pizza with it. Add a layer (or two) of sliced mushrooms. Add one can of artichoke hearts (sliced however you want). Cover with crumbled feta cheese (about 3/4 of a container) and then top with black olive slices. Sometimes I get creative and also top with sliced grape or cherry tomatoes for color.
Bake at 375 for about 10-20 minutes. I can't remember, but when the crust is crispy it's done! I bake it right on the oven rack but line the rack beneath it with foil to catch the drippings.
This is one delicious pizza! Even picky adults who only ever eat Southern cooking like it - much to their suprise!
And it's even better the next day warmed up!
