I'm simplifying our meals by using fewer pre-packaged, processed foods and using more fruits and vegetables (lightly steamed or raw). I'm pretty much a vegetarian now, and I'm trying to fix more meatless meals for my family as well.
I think it's interesting that you began with "If money was not an issue...". I was recently talking to my dh about this. The people who are on tight food budgets and feel bad about eating things like rice and beans are likely to have fewer health problems as a result. The people living on steaks, rich food, etc. might think they are fortunate, but they're more likely to end up with problems like heart disease. I think it's wonderful that you don't have to be rich to eat healthy!
