"Ulysses" is not to be missed, IMO. This is the one that the quote "to strive, to seek, to find, and not to yield" comes from. A beautiful poem, with plenty to discuss.

Idylls of the King is great, but *long.* I have my dc read the last section, called "The Passing of Arthur." Wouldn't miss this one either.

I also like "Crossing the Bar" and "St. Simeon Stylites." "The Lady of Shalott" is good too, and often quoted or referred to in art and literature.
