We (family of 7) just did Disney (9 days), Kennedy Space Center (1 day) and Universal (1 day). It was a great trip. I used the Unofficial Guides for Disney and the one called "Beyond Disney" - both were great. Just a point worth a laugh...we had GPS in the car and typed in "Kennedy Space Center" for our directions. Would you believe we drove 1 1/2 hours to get to a credit union?? It was a Kennedy Space Center Credit Union.
I would also recommend staying in a private home for rental. It is so much more comfortable and you can still eat out as much as you like (better value as well!). You can email me privately and I can give you the website/name/number etc.!
